04 — The Method

Everything starts as a grape.

Dr Norrie's method adds one thing to finished wine: Resveratrol, drawn from grape skins — Nothing else goes in.

Make the wine first

Barossa Valley fruit, harvested and vinified conventionally. Structure, balance and character are settled before anything else happens. If the wine isn't good on its own, it doesn't go any further.

Draw the compound from grape skins

Resveratrol is extracted from the skins of Vitis vinifera grapes: the same species that's in the bottle, and the same part of the fruit that puts resveratrol in wine in the first place.

Return it to the wine

The concentrate is blended into a small volume of wine, then folded gently through the batch after fining and filtration, when the wine is already finished and stable.

Verify before release

The Australian Wine Research Institute measures the finished wine before it goes to bottle. It's the industry's own laboratory, not ours.

06 — The Inventor

The innovator behind the wine.

Dr Philip Norrie spent 40+ years as a general practitioner in Sydney, alongside a lifelong fascination with wine and its history. His interest in resveratrol led him to investigate whether the compound naturally present in grape skins could be concentrated and returned to finished wine.

Three decades of research became the R.E.W.® method.

In 2006, that method became a reality: Resveratrol drawn from grape skins and returned to finished wine at a concentration of 100mg per litre. The method was patented in Australia.

Twenty years later, nobody has made another wine quite like it.

Norrie went on to write more than 18 books on wine and its history and was elected a Fellow of the Royal Society of New South Wales.

The Wine Doctor also continues a distinctly Australian tradition. Some of the country's best-known wine houses — including Penfolds, Lindemans, Hardys, Angove and Kelly's — were founded by doctors.

The questions we get.

What is Resveratrol?

Resveratrol is a naturally occurring polyphenol—a type of molecule produced by grapevines and certain other plants. In grapes, it is found primarily in the skins and passes into wine while the juice remains in contact with them during fermentation. This is why red wine generally contains more resveratrol than white wine.

Most conventional red wines contain approximately 4-6 mg of resveratrol per litre.

What does it do in grapes?

Resveratrol forms part of the grapevine’s natural response to environmental stress. The vine produces it in response to challenges such as fungal exposure, physical damage and ultraviolet light.

Our wine contains 100 mg of grape-derived resveratrol per litre, verified by the Australian Wine Research Institute.

This describes the wine’s composition; it is not a claim about effects on human health.

Does it taste different from normal wine?

No. The method is applied to wine that's already finished, and is indicernable on the palate. It's a Barossa shiraz and it tastes like one — which is the whole point, and also the hardest part.

Is this wine, or a supplement?

Wine. It's made and labelled as wine under Australian food and wine standards, and it has the alcohol content of an ordinary shiraz. Everything in it comes from a grape — it simply holds a great deal more of one thing the grape already makes.

How do you get to 100mg/L?

Resveratrol is extracted from the skins of Vitis Vinifera grapes and blended back into the finished wine after fining and filtration, immediately before bottling. Dr Philip Norrie developed the method in 2006 and it's protected by Australian patent AU2008318262.

How do I know the number is real?

Because we didn't measure it. The Australian Wine Research Institute did — the technical body the Australian wine industry set up to keep itself honest, and the same laboratory the country's largest wineries use. We send them wine and they tell us what's in it.

We don't publish the analysis reports themselves; they're commercial documents and we treat them that way. But the number on this page isn't our opinion of our own wine, and that's the part that matters.

Should I drink more of it?

No, and that's the point. The idea is more of one compound in the same glass of wine, not more wine. Australian guidelines on alcohol apply to this bottle exactly as they do to any other, and nothing about it is a reason to drink differently.

Which one should I buy?

The Barossa Shiraz three-pack at $99 is our most accessible introduction to REW. Elysium features our premium estate wines from the 2016 and 2017 vintages, while ResElixir is a concentrated 1.5 L cask. Each offers a different expression of the REW experience.
